Maple banon is a semi-ripened disc of chèvre wrapped in maple and grape leaves harvested on the farm and tied with raffia. Before wrapping, the leaves are soaked in organic VT maple liqueur. This lovely little package imparts a green, vegetal flavor with just a hint of sweetness. ACS 2nd place winner, 2024
